Turnditch is a hillside village that lies on the A517 Belper to Ashbourne road on its steep climb out of the Ecclesbourne valley.

Turnditch Tiger tart is my own recipe for a delicious raspberry chocolate fudge tart, named after my local pub "The Tiger"
Pastry.
Rub 90gm of butter and 40gm caster sugar into 140gm of plain flour and 15gm cocoa. Add 1 egg yolk and a liitle water and combine into a dough. Wrap in clingfilm and chill in fridge for 1 hour. Grease and flour a 9 inch pastry tin, roll out pastry and line tin, prick with a fork and chill well.
Pre heat oven to 190 C or gas mark 5, fill pastry with baking beans and bake blind for 15 mins, remove beans and bake another 10 mins until firm.
Filling
Scatter fresh raspberries over the pastry, then melt 250gm dark chocolate in a bowl. In a saucepan, melt slowly 300ml double cream, 50gm butter and 2 tbsp of glucose, pour over the chocolate and mix to a smooth ganache.
Pour this into the pastry and leave to firm up for an hour before serving.
